Soy Sauce & Lime Salmon

I can't believe it's almost mid-February already! After the holidays I got so busy with my real life job that all my hopes and dreams of staying healthy throughout January kind of fell apart (there was more pizza than pilates). Although I don't really believe in new year resolutions I usually use it as a refresher to revisit my habits. Anyways, today I woke up at like 4am (I do that some times, it's weird) and did my 10 minute meditation with the Headspace app (which is amazing by the way!) and went to work out and I feel amazing! If only I could keep this up. One of my go-to dishes when I'm trying to get back on track is salmon. The health benefits of eating salmon are no secret and there are so many ways to prepare it! This one is one of my favorites. Hope you like it!

Soy Sauce & Lime Glazed Salmon

Ingredients

  • 2 6oz Salmon Filets wild-caught if possible
  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 2 tbsp Kikkoman Soy Sauce
  • 2 tbsp Honey
  • 2 Limes
  • 2 tbsp Cilantro or to taste
  • Salt & Pepper to taste
  • 1 cup Cooked Jasmine Rice

Instructions

  1. Heat up a non-stick skillet with the olive oil

  2. Add salt & pepper to your salmon

  3. Place salmon skin side down (if keeping skin on) and cook for 4 minutes before flipping to the other side for 1 minute

  4. Remove salmon and place to the side

  5. Zest your limes and place the zest aside

  6. In the same skillet add the butter - once melted add the soy sauce, honey, and lime juice and stir to combine - stir for about 2-3 minutes or until it's a bit thicker

  7. Add the salmon back into the skillet and coat with your sauce

  8. Place the salmon over your rice (add more sauce) and sprinkle with lime zest and cilantro
