Hey guys! Starting tomorrow I will officially be in the third trimester. It's been such a fun time, but all of a sudden things have gotten very real. I'm definitely larger, more uncomfortable and I feel baby Jack kicking ALL.OF.THE.TIME. I, of course, have been trying to eat really healthy since the baby is eating what I'm eating, but I definitely cheat...a lot AKA I'm probably going to be getting a burger at P. Terry's after my doctor appointment. Anyway here's a list of some recipes I tried last week that were healthy and delicious!
Creamy Farro with Pesto, Asparagus, and Peas
This was so, so good and perfect for spring. I ended up just buying store-bought pesto to speed up the process, but rest assured this would’ve been deeelicious with home-made pesto. My husband was also in the mood to grill so he grilled up the asparagus. To us, grilled asparagus just tastes so much better.
Vegan Ramen with Zucchini Noodles
I’ve been dabbling in the vegan world. I don’t think I could ever really make the switch, but it’s so nice to fill the work week with veggie packed recipes which this one definitely is. If you’re craving ramen this won’t really replace that, BUT it will provide you with a health dinner!
Grilled Avocado & Shrimp Salad With Citrus Dressing
I have been on a major shrimp kick lately and I’m not complaining. This salad was AWESOME. I’ll definitely be making this again especially as the heat index rises here in Austin, TX.
