Recipe Round Up & Grocery List – Week of July 29th

Life with a newborn has been hectic and, to be honest, I debated retiring Claire Craves because it all seemed like too much. Our little one is almost 8 weeks old and I'm just now starting to feel more like myself. I'd like to say that I've LOVED motherhood at all times, but the first 8 weeks involved a lot of trial and error and very little sleep. Don't get me wrong, I'm pretty much obsessed with our peanut, but I've missed writing, cooking, etc. and I think it's healthy to keep your old hobbies since it's so easy to kinda lose yourself a bit in motherhood. Ground Turkey Sweet Potato Skillet

This was super easy to make and HIT.THE.SPOT. I actually bought these bags of sweet potatoes from H-E-B. I like ’em cause you can microwave them in the bag real quick and you can have a healthy snack option pretty quickly.

Israeli Couscous Salad with Broccoli, Chickpeas, and Pesto

Is it just me or can you never spell Broccoli right the first time? I always have to look it up. Anyways, this recipe IS AWESOME. I almost didn’t have to add the pesto to it it was so flavorful, but of course pesto always makes things better.

Farro Salad

So I found this recipe on Pinterest and I’m obsessed with Farro so I made it and I’m so happy I did. I never had the original Nordstrom version, but holy cow this was good. We are actually going ot make it again when we have some guests over this weekend. Definitely check it out. FYI: I did not add asparagus and I used Arugula.

Baked Sweet Corn Farro Salad

Yup, Farro again. I told you I was obsessed. This salad tasted so good and almost decadent for how healthy it is. I know it’s supposed to be a vegetarian dish, but I may add ground turkey to it next time. FYI: I did not add the half & half to this and it was fine!

Grocery List:

(Reminder: this is in order of my grocery store, but hopefully it sort of matches yours as well!)

Broccoli (I just bought a bag of pre-cut broccoli)
Garlic
Lemon
2 Small Yellow Onions (You’ll use for two recipes)
Cherry Tomatoes
1 Yellow Bell Pepper
French Green Beans
Small Arugula
2 Ears Corn (or 1 can of corn)
3 small or 2 large Sweet Potatoes
Cilantro
Ground Turkey (1 lb)
Pecorino Cheese
Manchego Cheese (About 1/4 lbs worth)
Shredded Mozzarella
1 can of Chickpeas
Farro (You’ll need roughly 3 cups for both recipes)
Walnuts
Pistachios
Israeli Couscous
Capers

Things you’ll need that I didn’t have to buy:

Salt & Pepper
Red Pepper Flakes
Ground Cumin
Chili Powder
Basil
White Wine
Chicken Broth (I would just buy 2 boxes or do a bulk order – always good to have on hand!)
Sherry Vinegar
Olive Oil
Honey
