Maternity leave has been such an interesting experience. On the one hand I am DYING to go back to work and on the other I want to spend every single second with our little peanut. It's such a weird feeling, but ultimately I think I am excited to go back to work. Motherhood truly is the hardest job on the planet and I bow down to those stay at home moms. I try to get out of the house every day with our little guy and without. I'll usually run an errand in the morning with Jack and in the evening my husband will watch him while I go work out. I've been using ClassPass and trying all kinds of different work outs which has been really fun. I actually went to my first kickboxing class this week at Knockout Austin and even though I'm pretty sure I look totally ridiculous I've been loving it!

Apple Dijon Kale Salad
If you are looking for a meal that you can quickly throw together that is healthy this is the one for you! In all transparency I ended up having a small side of pasta with this cause I was STARVING after going to a kickboxing class.

Roasted Sweet Potato Quinoa Salad
This was probably my favorite recipe this week. Super easy to make and really tasty. This would also be easy to make on Sunday and keep in the fridge for a few days (as long as you keep the dressing separate!)
Baby Bella mushrooms
1 Granny Smith Apple
Spinach (larger bag – you’ll use for 2 recipes)
6 Sweet Potatoes
1 Can Chickpeas
4 large chicken cutlets
White Wine (need 1/2 cup’s worth – I’ve been buying those small boxed ones when I’m only using it for a recipe)
