Lazy Sundays are the best. My husband and I were out at breakfast eating delicious pancakes one morning and thought to ourselves, "Why are we spending $30 on breakfast when we are eating pancakes we can make at home?" So we decided to save money moving forward by avoiding eating out for breakfast.* My first crack at it were these lemon-blueberry pancakes that totally hit the spot.
Lemon Blueberry Pancakes
Warning: I was trying to re-create restaurant pancakes so there is a lot of butter :).
- 1 3/4 cup flour
- 2 tsp sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 cups buttermilk
- 2 eggs
- 1/4 cup unsalted butter melted
- 1 lemon zested
- 1/2 cup blueberries
Mix together the flour, sugar, baking powder, baking soda, and the salt.
In a separate bowl, mix buttermilk and eggs and add to the dry mix. After this is mixed, stir in butter.
Zest the lemon into the mixture and add the blueberries, combine ingredients.
Heat and add butter to the griddle. Spoon on your pancake mix. I use a measuring cup (1/4 cup) to spoon it out so they are all the same size. Normally takes 3 minutes a side or wait until you see bubbles before flipping.
Dress with syrup and butter and maybe some powder sugar if you are feeling crazy.
