Healthy Lentil Chili

Being healthy can suck. Especially when you start craving the bad stuff, like red meat chili! I was inspired to make this lentil chili after cooking this Detox Lentil Soup (which is SO good by the way) and you'll notice a lot of the ingredients are similar with slight tweaks to give it that chili vibe. Make this next time you are craving chili and I promise you will not be disappointed.

Healthy Lentil Chili

Total Time 8 hours 20 minutes
Servings 8

Ingredients

  • 2 cups Butternut Squash
  • 2 cups Carrots peeled
  • 2 cups Red Potatoes chopped
  • 2 cups Celery chopped
  • 1 cup Black Lentils
  • 1 cup Green Lentils
  • 1 Yellow Onion chopped
  • 3 cloves Garlic minced
  • 8 cups Vegetable Broth
  • 2 tsp Hebs de Provence
  • 1 tsp Chili Powder
  • Salt to taste

Optional Additions: Pancetta (cooked), sour cream, avocado, Oaxaca cheese (or any cheese you prefer)

Instructions

  1. Place all ingredients except the optional additions into a Crockpot and cook on low for 7-8 hours

  2. Once complete spoon out into bowls and top with any of the optional additions (I recommend all of them)
