Grilled Shrimp with Chile, Parsley, and Garlic
This recipe is perfect for a summer day. I served it with some french bread and butter in my backyard.
- 2 lbs Jumbo Shrimp de-veined, de-shelled
- 5-6 tbsp Olive Oil
- 2 Garlic Cloves
- Crushed Red Peppers to taste
- Salt & Pepper to taste
- 1/4 cup Parsley
Preheat grill to medium-heat and oil
Coat Jumbo Shrimp with about 2 tablespoons of olive oil and season with salt and pepper
Grill the shrimp until pink and it's cooked through (roughly 5-7 minutes)
While the shrimp are grilling, combine 3-4 tablespoons olive oil with crushed red peppers, garlic, and the fresh parsley
(I like things spicy so adjust the crushed red peppers to taste)
Add the grilled shrimp to your mixture and toss
Serve immediately with the remaining mixture poured over and season with salt and pepper
