Chickpea, Avocado & Feta Salad

I love food, clearly, but since I love food so much I need to make sure that, for the most part, I'm eating healthy things so when I do get that cheeseburger from Shake Shack I can really enjoy it. My rule is that Sunday dinner - Friday lunch every meal should be relatively healthy. I don't ALWAYS follow this, but use it as kind of a guideline. This allows me to eat whatever I want Friday dinner - Sunday breakfast without much of the guilt.
Chickpea, Avocado & Feta Salad
This chickpea salad was quick to make and super delicious - perfect for a healthy weeknight dinner!

Ingredients
- (2) 16 oz Cans of Chickpeas
- 1 Avocado diced
- 1 Lime juiced
- 1 Jalapeno diced
- 1/4 cup Feta Crumbles
- 1 tbsp Olive Oil
- Salt & Pepper to taste
- 1/4 cup Fresh Cilantro

Drain and rinse Chickpeas

Add all ingredients into a bowl and season with salt & pepper and cilantro
