Lemon & Ricotta Stuffed Baked Potato with Hot Honey

I love, love, love Mike's Hot Honey (I promise this is not even a sponsored post). It tastes so good on so many things including pizza, crostinis, etc. because it has that spicy-sweet taste to it, yum. I wanted to see how it would end up tasting on another thing I love, a baked potato and voila! here we are. We whipped up these potatoes with a steak and they were deeelicious. Let me know what you think and what else you think Mike's Hot Honey would be good on.


Lemon & Ricotta Stuffed Baked Potato with Hot Honey

Prep Time 10 minutes
Cook Time 1 hour 20 minutes
Total Time 1 hour 30 minutes
Servings 2


  • 2 Potatoes
  • 2 tbsp Olive Oil
  • 1/2 cup Ricotta Cheese
  • 1 Lemon zested
  • 2 tsp Dried or Fresh Basil
  • Mike's Hot Honey drizzle
  • Salt & Pepper to taste


  1. Preheat the oven to 400 degrees

  2. Wash the potatoes and then cover with the olive oil and salt

  3. Place the potatoes in the oven for 50-60 minutes

  4. Take out and let them cool down for 10 minutes

  5. While the potatoes are cooling, mix together the ricotta, lemon zest, lemon juice, and salt & pepper in a small bowl

  6. Split open the baked potatoes and add the mixture on top

  7. Top with the dried basil and a drizzle of Mike's Hot Honey
