Citrus Jumbo Gulf Shrimp Over Rice

This dish is borderline too summery, but October is actually National Seafood Month and in Austin, Texas it's still warm enough to pretend like it's summer. Anyways, this dish is light, citrusy, and delicious and it's super easy to make.


Citrus Jumbo Gulf Shrimp Over Rice

  • 1 lb Jumbo Shrimp shelled and deveined
  • 1 Orange juiced and zested
  • 1 Lemon juiced and zested
  • 1 tbsp Crushed Red Peppers
  • 1/4 cup Olive Oil
  • 1 tbsp Fresh Parsley
  • 1 tbsp Fresh Cilantro
  • Salt to taste


  1. Place all ingredients in a bowl and toss to combine

  2. Remove the shrimp and place on a grill at medium-to-high heat and cook until just white/pink or about 4-5 minutes

  3. Place over white rice on a plate
